Easy Banana Bread


We love banana bread!

It's something we make a lot because banana's just seem to ripen really fast in our house. We constantly have a bowl of overripe bananas in the kitchen. I hate to throw away food and so our solution is a weekly loaf of banana bread.

Super nice thing to give away to friends, family, neighbors or strangers as a random act of kindness.

This is my family recipe that I have been making and enjoying my entire life. It is so easy that once you've made it a few times the recipe will be lodged into your brain forever. 

It is also kid friendly baking!

Original Family Recipe

1/4 cup softened butter
1 cup sugar
2 eggs
1 tsp vanilla essence
2 cups flour
2 tsp baking powder
4-6 mashed up bananas


Combine the butter and sugar in a large mixing bowl (until crumb-like)
add the eggs and the vanilla essence and mix
sift in the flour and baking powder
add mashed banana and mix.

Pour into a greased/floured baking pan
bake for 1 hour at 180 celsius

Keep an eye on it though, ovens are different. It is ready when a knife comes out clean. Let it cool at least 10 minutes before turning it out of the pan. 

You should let it cool down completely before slicing - if your family will allow you such a luxury. In my house the banana bread is savagely attacked as it comes out of the pan and the result is a huge crumbly (but delicious) mess.




Vegan-ised Recipe

Swap out the butter for a vegan margarine
leave out the eggs (banana is a great egg substitute for baking)
use 1 tsp baking powder 
and 1 tsp baking soda.
