Super Delicious Lentil Bolognaise

Eating vegan is such a simple thing, you can still eat all of the same things that you currently enjoy, just vegan-ise it. 
Swap out the protein, easy as that.

I absolutely love this bolognaise, I could have it everyday and be happy.

Ingredients:

Olive oil for frying
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped

1 Tbl chopped garlic
1 can/packet tomato paste

1 cup dry red wine

1 can chopped tomatoes
2 tomatoes, diced

2 bay leaves
2 tsp sweet basil
1 tsp oregano
¼ tsp baking soda

2 cups lentils
water


 Recipe:

Fry the onion, carrots and celery until soft, about 10 minutes.
Add the garlic and fry for 1 minute.
Add the tomato paste and fry 1 minute.
Add the wine and simmer for about 5 minutes.

Add the can of tomato, diced tomatoes, herbs and baking soda.
Add the lentils and water as needed.

Simmer for about 1.5 hours, when the veggies and lentils are softened.

Enjoy.



There are tons of different ways that you can serve your bolognaise. Traditional style with pasta or even on a yummy bed of mashed potato - my word how I love mashed potato.
